      Item# 1096J 北海道頂級 馬糞海膽/紫針海膽 刺身

      世界上最好的海膽來自兩個地方,日本的北海道以及美國加州的Santa Barbara海域。日本的北海道因為本身海域溫度低,水質清澈,孕育出極其美味的海膽,在世界上享有盛名。

      馬糞海膽 對 紫海膽:

      馬糞海膽屬於赤海膽一種,而紫海膽 (Murasaki) 即是白海膽 (紫殼白肉)。馬糞海膽顏色偏橘橙色,紫海膽偏淺黃色。由於顏色也取決於海膽品種,切勿只以顏色定義優劣,新鮮度與味道才是最重要,808SUPER提供的海膽保證新鮮!

      Bafun VS Murasaki

      Bafun falls under the Aka Uni umbrella (Red Uni) and Murasaki a.k.a Shiro Uni (White Uni) has purple shell with so called "white flesh" (greyish light yellow). The Bafun would look more enticing than the Murasaki in terms of color since it is bright orange. Since color depends on the sea urchin species, color should not be used to define good or bad, freshness and taste are what you should focus on. Absolutely, the freshness of our Uni are guaranteed!


       
      紫海膽 / 北紫海膽 (即白海膽,紫殼白肉) 

      • 時令季節當造期:晚春至夏末
      • 顏色:淡黃中帶紫或灰色
      • 特色:個體大,肉較大塊,味道清雅,甘甜中帶香醇,口感實在
      • 最佳配搭:無鹽無調味的海苔、醬油漬鮭魚子(三文魚子)、日本清酒 或 酸度適中/味道清爽/不甜/苦澀味不重的香檳
      赤海膽 / 馬糞 / 蝦夷馬糞 海膽
      赤海膽亦是馬糞海膽的一種,分別在於不同產季
      • 時令季節當造期:夏末秋初
      • 顏色:鮮艷的橙色
      • 特色:個體小,相對每塊如指甲般大小,口感奶滑,入口即溶,味道濃郁,鹹鮮味亦相對較重,非當造期味道帶甘。 
      • 最佳配搭:無鹽無調味的海苔、或可配上同樣濃味的碎青蔥、任何酸度高/較Dry/口感清爽的白酒

      總括:

      • 北海道馬糞海膽 : 體形較小,肉的顏色較深,每塊若一片指甲般大小,口感濃郁,一片片橙色花瓣般滑入口中即時化掉極富鮮甜。

      • 北海道紫針海膽 : 俗稱白海膽,體形較大,每塊若半隻拇指般大小,顏色淺黃帶灰紫色,味道清雅鮮甜,口感較實在。

       

      Our Japanese Uni is air-flown from Hokkaido. They are grown in Hokkaido with highly nutritious Hokkaido Kelp, called Kombu which is a delicacy in its own right. This AA grade Uni from Hokkaido is the most prized because of the Kombu. They are well known for their consistency and sweet-tasting. 

      Murasaki Uni is famous for being much bigger in size and has a lighter rich yellow and slightly in greyish with a firm but creamy texture and sweet undertones. Its taste is much cleaner and less briny compared to the other Uni, making it the perfect Uni for starters and those who are new to Uni but want to enjoy the flavors of fresh Uni.
