牛坑腩 Deckle-off brisket

坑腩是廣東/香港的說法,也就是常說的牛肋條。這個部位牛味最濃,取自牛胸前的牛仔骨/肋排或旁邊牛肋條部位的的肉,坑腩屬近腰肋骨的肉,除去肋骨後會出現一條條坑,所以稱為坑腩。其肉質韌性大,肥瘦相間,最適合用作燜或熬湯,或製作馳名的清湯牛腩蘿蔔。
